I love knowing that my girlfriends are there for me. They care about my life – as I do theirs. Sometimes our texts, phone calls, visits and always our hugs are just like Pooh and Piglet above – making sure that we really are there for each other. Girlfriend Guru LINDA STEELE shares her insights on Pooh and friends (and food!) in this ‘recipe for friendship’ guest blog:
What I like most about this Winnie the Pooh quote is the simple reminder that what‘s often most important with our friends is to just let them know we’re there for them. July is always a busy month at my house. We get lots of family and friends that call to come down for a visit. And every once and awhile I feel there is a particular friend or two I’ve been neglecting.
I wanted to let one particular friend know I was thinking about her so I called her and offered to make us Chicken Cesar Salad Wraps for an impromptu July Lunch Club. It was a nice day out so I offered to pack them up and meet her down at the beach.
My most recently published article in the Upper Cape Cod Supplement Magazine was all about “Foods to Make and Take to the Beach.” And one of the suggestions I gave in the story was Chicken Cesar Salad wraps because they’re a satisfying sandwich for a day with a friend at the beach.
My youngest daughter celebrated her 8th birthday recently. We baked pony shaped sugar cookies together to give as party favors to her friends when they arrived. We chose pony shaped cookies because it was a pony riding party.
As for raising confident girls it something I really believe in. When we were on vacation recently my youngest daughter joined in on a canyon climbing adventure. She suited up in the helmet and donned the rope gear and made her way down the canyon. It’s her confidence that helped her to achieve this.
I think long-lasting, healthy, and supportive friendships between women begin with young girls who are confident within themselves. And my hope for each of my children is to enjoy long-lasting and supportive friendships with their peers. I want them to feel their friends are there for them when they need them. Like Piglet was looking for from Pooh.
Remember (if you haven’t been already) take some time to enjoy the summer weather with a good friend soon. Mild weather really is a blessing and it never seems to last for very long. Remember to invite a friend to join you. In case you feel like it, maybe pack a picnic of Chicken Salad Wraps, too.
Quick & Easy Recipe for Chicken Caesar Salad Wraps
4 Fajita or Burrito size Flour Tortilla’s
1 lb. Grilled, Baked, or Broiled Boneless, Skinless Chicken Breast, Chopped Fine
½ cup Freshly Grated Parmesan Cheese
Caesar Salad Dressing
Fresh Romaine Lettuce, washed and, Chopped Fine
Freshly ground Black Pepper and Sea Salt to taste
On a clean dry surface lay flat the tortillas. In a medium size bowl toss all ingredients together. Place a large spoonful of salad in the center and wrap the tortilla tightly and then wrap in either plastic wrap or aluminum foil. Enjoy!
